Ingredients

Dough

  • 360 g Steve’s Gluten Free Bread Flour
  • 40 g granulated sugar
  • ½ tsp salt
  • 48 g butter
  • 165 g water
  • 128 g milk
  • 2 eggs

Apple Filling

  • 2 apples, peeled and cut into small pieces
  • 50 g brown sugar
  • 1 tbsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground ginger
  • Pinch of salt

Additional ingredients:

  • Neutral oil, for frying
  • Powdered sugar glaze, for finishing

Method

  1. Prepare the ApplesPeel the apples and cut them into small pieces. In a bowl, toss with the brown sugar, cinnamon, nutmeg, ginger, and salt. Set aside.
  2. Mix the Dry IngredientsIn the bowl of a stand mixer fitted with the paddle attachment, combine the Steve’s Gluten Free Bread Flour, granulated sugar, and salt.
  3. Add the ButterAdd the butter and mix on low speed until evenly distributed throughout the flour mixture.
  4. Add the Wet IngredientsAdd the water, milk, and eggs. Mix on low speed until combined, then increase to medium speed and mix until the dough is smooth and cohesive.
  5. Rest the DoughCover the dough and let it rest for 20–30 minutes to allow the flour to hydrate and make the dough easier to handle.
  6. Incorporate the ApplesLightly flour your work surface and roll the dough into a rectangle. Spread the prepared apples over half of the dough, leaving a small border around the edges. Fold the uncovered half over the apples, like closing a book.Using a bench scraper or knife, cut through the folded dough several times to distribute the apples. Gently bring the dough together without overworking it.
  7. Portion and ShapeDivide the dough into 90 g portions. Shape each portion into a rough fritter, keeping as much of the apple filling inside as possible. Gently flatten each fritter while keeping its shape irregular and thick.
  8. Fry the FrittersHeat neutral frying oil to 350°F. Carefully add the fritters in small batches, taking care not to overcrowd the pan. Fry for approximately 2–3 minutes per side, or until golden brown and cooked through.
  9. Drain and CoolTransfer the fritters to a wire rack or paper-lined tray to drain. Allow them to cool slightly before glazing.
  10. Glaze and ServeDrizzle or dip the fritters in powdered sugar glaze. Let the glaze set briefly before serving.
