The Authentic Foods Pie Crust Mix is is made from our signature superfine rice flours and our Almond Meal Flour. Pie crusts made from this mix are so good that you will even love cookies and cookie bars made from this mix.
 
Also, making a pie crust from this mix is as simple as 1-2-3. Just add egg yolk, cream (or non-dairy cream) and butter, roll the dough, put it on a pie pan, bake and voila! It’s great with any kind of pie you can think of, key lime pies, apple pies, Boston Cream pies, pecan pies, cheesecakes, etc. 
 
This mix makes one pie crust.

"When I noticed an unassuming Authentic Foods package for gluten free pie crust mix sitting on the shelf at my local grocery store a few days ago, it reminded me of how many times I have attempted (and failed) to make pie crust since going gluten free. My pie crust mishaps weren’t tragic or even exciting - just a little too crumbly, a little too dry, a little too blah. Nothing worth reporting back about.

Still, I must not have given up on baking a gluten free pie completely... because something made me pick up this particular packet of mix and put it in my cart. Maybe I chose it because I saw they were using almond flour and I am definitely a sucker for desserts made with almond flour! Whatever the reason, I can’t tell you how surprised I was when I opened the pie crust packet and was immediately enveloped in the most wonderful odor – a combination of cinnamon, vanilla and almond. If they bottled that fragrance, I would bathe in it. Seriously.

Working with the dough was easy, although I found I needed to add quite a bit more cream than the package suggested in order to fashion dough that held together nicely. I was pleased to find that it didn’t need a long time to chill before rolling out, and once you try this pie I think you will agree with my husband that this crust complements the peach filling perfectly.

I almost called this recipe magic pie because every single bite is deliciously sweet but not syrupy, and the flavor of the ripe peaches balances the almond crust beautifully. "

Pie Crust

Ingredients:
1 package Authentic Foods Pie Crust Mix
1 large egg yolk
2 tablespoons cream or non-dairy substitute
4 oz sweet butter or solid shortening cut into small cubes

Directions:
Preheat the oven to 350 degrees Fahrenheit.

In a small bowl, mix the egg yolk and cream; then set aside. Using an electric mixer cream the butter or shortening for about 1 minute. Then mix in the pie crust mix until evenly distributed. Add the egg mixture and beat at low speed until the dough pulls away from the side of the bowl. Add an extra tablespoon of cream if necessary. Remove the dough from the bowl and form it into a ball. Place the dough on a silpat baking sheet (if you don’t have a silpat baking sheet, you can place the dough on wax paper taped onto a hard, flat surface). Then flatten the dough using your hands. With a rolling pin, roll from the center of the dough to the edge of the dough with light, even strokes, forming a circle about 12 inches in diameter and about ¼ inch thick. Place a 9 inch pie pan in the center of the dough and flip it with the pie crust dough over. Trim the edges of the pie crust dough. Then prick the bottom and sides with a fork.

For a cooked filling, bake the pie crust for 15 minutes or until golden brown. If the pie will be baked again, bake the pie for 5 minutes in the oven. Then place the filling in the pie and bake again for the instructed time.
