Pancakes
Makes about 8 pancakes.

Ingredients:
1 cup Authentic Foods Garfava Flour
¼ teaspoon baking soda
2 tablespoons Authentic Foods Maple Sugar
½ teaspoon Authentic Foods Vanilla Powder
½ teaspoon salt
2 eggs or 3 egg whites
2 teaspoons baking powder
¼ teaspoon Authentic Foods Xanthan Gum
1 cup milk or milk substitute
2 tablespoons vegetable oil

Directions:
In a medium bowl, combine all dry ingredients: Authentic Foods Garfava Flour, baking soda, baking powder, Authentic Foods Maple Sugar, Authentic Foods Vanilla Powder, Authentic Foods Xanthan Gum, and salt.

In another bowl, beat eggs, milk and oil. Add this mixture to the dry ingredient mixture and mix until smooth.

Preheat griddle or skillet, that has been lightly coated with oil, to 350 degrees. Using a large tablespoon, drop batter to make 4 inch diameter pancakes. Cook first side until bubbles form and begin to pop. With your spatula, flip the pancake and cook until the second side is golden brown. Serve with syrup, preserves or fruit.
